One Last SUPER Super Bowl Recipe . . . Zesty Grapefruit Guacamole!

I know the game is only hours away, but it's not too late to make this amazing recipe I found on an blog site for avocados!   Served along side Blood Orange Salsa and some Southwest Style Flax Crackers this is sure to be a SUPER healthy, Real Food line up that makes citrus fruit the star of your table!


I was reviewing some articles on citrus fruit and Vitamin C a few days ago and found a common thread . . . in a tablet Vitamin C has some benefits, but when ingested in Real Food, particularly citrus fruit, it plays a big role in weight management!  So if your New Year's resolution had anything to do with losing weight eat at least 1 piece of citrus fruit per day.


And let's not forget those avocados - creamy, delicious and filled with fiber, yes, fiber!  Besides being packed with healthy fats, avocados are a nutrient dense food that's packs in tons of fiber.


This recipe is sure to be one of those OMG! All Star's in your file!







Zesty Grapefruit Guacamole

2 Avocados from Mexico, peeled and cut into small cubes
1 pink grapefruit, peeled and segmented with membrane removed and sections cut into small pieces
1 tablespoon fresh grapefruit juice
1/4 cup finely chopped red onion
1/4 cup finely chopped cilantro
1/4 teaspoon salt
Combine all ingredients. Lightly mash ingredients together but leave them chunky. Serve immediately.
