To help you plan ahead I had intended to post the entire menu for my Azetc inspired Valentine's Day dinner . . . but somehow I omitted it from today's post! So here it is . . .
A salad of baby greens, tangerines, cacao dusted toasted almonds, tossed in a chocolate balsamic vinaigrette and garnished with chili dusted goat cheese "croutons" and edible flowers
Poblano pepper stuffed with chicken or tempeh mole on a bed of cilantro-lime cauliflower rice, and tangerine glazed globe carrots, lime wedges, dusted with cacao powder
Cool and spicy chocolate Aztec granita with coconut creme
The great news is that everything but the carrots can be made in advance! So each day I'll be posting recipes and photos to help you make a meal that tastes like it was made by a professional chef, looks like it took you all day to make and is filled with ingredients to spice up your evening!
