It's National Chocolate Day 2012!

I certainly could not pass up an opportunity to share something about chocolate on National Chocolate Day!!!

So I decided to re-blog some of my favorite chocolate facts and recipes with you . . .

Who could forget that back in March I explained that the literal translation for the latin name of chocolate is "Food of the Gods"?  Or that it contains 10 times more antioxidant polyphenols than berries!!!

To jog your memory SIMPLY CLICK HERE to go back to that article.  Trust me, it's worth remembering!

Of course there is the entire chocolate dining experience for Valentines Day . . .

From the Tangerine and Chocolate Salad laced with Crunchy Cacao Coated Roasted Almonds and tossed in a Chocolate Balsamic Viniagrette . . .

to the cacao infused Roasted Chicken or Tempeh Stuffed Peppers in Mole Sauce

and last but certainly not least, Chocolate Aztec Granita!

But then I am a bit of a chocoholic, so when I created these super healthy and delicious truffles out of sweet potatoes, yes you read that correctly, sweet potatoes, I was even amazed!  Which is how they got their name -
OMG! You Must Be Kidding! Dark Chocolate Truffles.

And now I am known by my Goddaughter Malena's friends as "Mimi, the truffle lady" . . .

But if you have a copy of my cookbook - OMG! That's Allergy Free?, then you have access to more amazing recipes like these . . .

Fresh Figs with Chocolate Balsamic Reduction and Mascarpone, p. 222
GF German Chocolate Cupcakes with SF Caramel Pecan Icing, p. 204
