So here's yesterday's blog post about Namaste Foods + my recipe for Irresistible Chocolate Walnut Brownies using Namaste's Brownie Mix!

Wheat, gluten and egg allergies can make holiday meal time a bit of a workout!  Especially when you have extended family around and must feed everyone!  And it has to be good!

This is the time you need a little help from an expert!  A little help to save some time, so that you can be a part of the celebration, instead of slaving away in the kitchen!

Let's face it, GF cooking is simply more time consuming . . . and the results are sometimes a bit dicy!

So using a tried and true packaged mix is the best option!  And Namaste Foods makes the best mixes I've ever used!

In fact, I like them so much I feature some of them in my cookbook - OMG! That's Allergy Free?  Just look what you can do with a prepackaged mix . . .

GF German Chocolate Cupcake with SF Caramel Coconut Pecan Icing
For these GF German Chocolate Cupcakes I used Namaste's Yellow Cake Mix . . .

GF Cranberry Muffins with Goat Cheese and Rosemary Pecans
To make these tender, moist and delicious muffins I used Namaste's Sugar Free Muffin Mix . . .

GF PB&B Pancakes
To satisfy the kid in all of us, I made these PB&B Pancakes with Namaste's GF Pancake and Waffle Mix . . .

GF Blueberry Waffles with Fresh Blueberry Syrup
To make these amazingly crisp, tender and yummy Blueberry Waffles I used that same versatile Waffle  and Pancake Mix . . .

GF Pumpkin & Toasted Walnut Waffles with Maple Creme Fraiche
And to make these waffles perfect for any holiday breakfast or brunch, I used that same Waffle and Pancake Mix!

Namaste Foods started out as a very small company in Coeur d’Alene, Idaho.  Lucky me, that’s where my office was located back when these mixes were only available at local health food stores!  The first mix I tried was the chocolate cake mix and I was so impressed.  That cake is moist, has a fantastic texture and is every bit as delicious as any cake I ever made – and I used to be a Pastry Chef!

These days Namaste has a whole line of both sweet and savory packaged mixes – and even a Sugar Free Muffin Mix so you can make savory muffins or add your favorite sweetener!

Namaste products contain no wheat, gluten, corn, soy, potato, dairy, casein, tree nuts or peanuts and are:
  • Carefully made in a Dedicated Allergen-Free Facility
  • Made with NO Genetically Modified Ingredients
  • Kosher Certified
  • Certified Gluten Free
Let’s face it, with all of the activities of the holidays as well as the some times unpredictable results when learning to bake gluten free, we can all use a sure fire shortcut!  These mixes truly take the guesswork out of cakes, muffins, blondies, brownies and so much more!

Namaste mixes are available all across the country, so they are pretty easy to find.  You can even find them on Amazon.com!  To learn more about Namaste Foods or to find a retailer in your area that carries their products, go to www.namastefoods.com.

Here’s a recipe I know you will LOVE that’s not available in my cookbook . . .

Irresistible Chocolate Walnut Brownies
Irresistible Chocolate Walnut Brownies

There are times when using a packaged mix is not just easier, it can also produce a superior end product!  In the case of brownies, Namaste’s mix is the best choice!  They are a snap to make and with just a few additions no one will ever guess they are Gluten Free!
Yield – 24 medium brownies

1 package Namaste GF Chocolate Brownie Mix
1 organic egg, lightly beaten or egg replacer
¼ cup strongly brewed Teechino or coffee
½ cup walnut oil
¾ cup walnuts, coarsely chopped
½ Tropical Source chocolate chips
3 tablespoons flax seeds

Arrange oven rack to the center of the oven and preheat to 350 degrees.

Grease a 9 x 9 inch pan, dust with cocoa powder* and sprinkle flax seeds evenly over the bottom of the pan.  Set aside.

In a mixing bowl add all ingredients and mix with a wooden spoon just until ingredients are well incorporated.  Do not over mix.  Over mixing will result in a cake like brownie rather than a fudgy brownie.

Bake in the center of the oven for approximately 22 minutes or until a toothpick inserted in the center comes out with a few crumbs.  Do Not Overbake!

Cool completely before cutting into 24 squares.

*When baking a chocolate cake or brownies, always dust your baking pan with cocoa instead of flour so that your baked goods will not have any unsightly white powder on the edges.
