Many people think it's difficult or impossible to get enough protein when eating vegan or vegetarian. So you may not realize that quinoa is a "super seed" because it is a complete protein!
That means that this dish not only looks beautiful and tastes amazing, it's also a wonderful source of protein!
You will notice the recipe earned one of my OMG! gold stars. That means that it contains 5 of my favorite nutritional all-stars - quinoa, sweet potatoes, kale, coconut milk and black beans!
